When the weather calls for baking but cherries are out of season, this recipe steps in perfectly. These wholesome cherry streusel bars are made with our 100% Pure Cherry Juice — no fresh or frozen fruit needed. Sweet, simple, and full of flavour, they’re just the thing for cosy mornings or afternoon tea by the fire.
Healthy Cherry Streusel Bars

Cherry Filling

1 ½ cups Eden Orchards Cherry Juice

2 tbsp maple syrup (optional)

1 tbsp lemon juice

2 tbsp cornflour
-
2 tbsp water (to dissolve starch)

In a saucepan, bring cherry juice and lemon juice to a simmer.

In a small bowl, dissolve cornflour in water. Whisk into the juice.

Stir over medium heat until thickened (about 3–5 minutes).

Remove from heat and let cool slightly. Sweeten if desired.
Oat Streusel Base & Crumble

1 ½ cups rolled oats

1 cup almond flour

¼ cup coconut oil (melted)

3 tbsp maple syrup

½ tsp cinnamon

Pinch of salt

Preheat oven to 175°C. Line an 20x20cm pan with baking paper.

In a large bowl, mix oats, almond flour, cinnamon, and salt.

Stir in oil and maple syrup until crumbly and moist.

Press ⅔ of the mixture into the pan for the base.

Pour over cherry filling. Crumble remaining oat mix on top.
Bake
Bake for 30–35 minutes, until golden. Let cool completely before slicing into bars — the filling will set as it cools.
Tip: Add a spoonful of chia seeds to the filling if you love a little extra texture!
