Still got a few Easter eggs hiding in the pantry? Here’s the perfect way to use them up—with a rich, fudgy brownie recipe that’s naturally sweetened and boosted with the goodness of Eden Orchards cherry juice. These brownies are everything you want: moist, chocolatey, just the right amount of sweet, and with a subtle cherry tang that takes things up a notch. Plus, they’re made with better-for-you ingredients so you can indulge with a little less guilt.
Ingredients:
-
½ cup Eden Orchards Cherry Juice
-
100g Easter egg chocolate – the darker, the better!
-
¼ cup coconut oil
-
½ cup coconut sugar
-
2 eggs
-
1 tsp vanilla extract
-
¾ cup almond flour
-
¼ cup cocoa powder
-
½ tsp baking soda
-
Pinch of salt
-
A handful of smashed Easter egg pieces
Method:
-
Preheat your oven to 175°C and line a small baking tin with baking paper.
-
In a small saucepan, gently melt the dark chocolate with the coconut oil over low heat, stirring until smooth. Let cool slightly.
-
In a bowl, whisk together the eggs, coconut sugar, vanilla, and cherry juice until well combined.
-
Stir in the melted chocolate mixture.
-
Sift in the almond flour, cocoa powder, baking soda, and salt, and mix until just combined.
-
Fold in any extra chocolate egg pieces.
-
Pour the batter into your prepared tin and bake for 20–25 minutes, or until the centre is just set (don’t overbake if you want them fudgy!).
-
Cool in the pan before slicing into generous squares.
Tip:
Want extra cherry goodness? Drizzle a little warmed cherry juice over the brownies before serving - enjoy!
