This cherry crumble captures all the rich, vibrant flavour of cherries using only Eden Orchards 100% Pure Cherry Juice. As the juice gently simmers, it reduces into a naturally sweet, ruby-red fruit filling beneath a golden, buttery crumble topping. It's simple to make, perfect for sharing, and delicious served warm with vanilla ice cream, yoghurt or custard.
Ingredients
Cherry Juice Filling
- 500ml Eden Orchards 100% Pure Cherry Juice
- 2 tbsp cornflour
- 2 tbsp cold water
- 2 tbsp raw sugar or brown sugar (optional, depending on your preferred sweetness)
- 1 tsp vanilla extract
- 1 tsp lemon juice
- Pinch of cinnamon (optional)
Crumble Topping
- 1 cup plain flour
- ¾ cup rolled oats
- ½ cup brown sugar
- 125g cold butter, diced
- Pinch of salt
Method
- Preheat the oven to 180°C fan bake.
- Pour the cherry juice into a saucepan and bring to a gentle simmer. Allow it to reduce by about one-third (around 15-20 minutes) to concentrate the flavour.
- Stir together the cornflour and cold water until smooth. Whisk into the reduced juice along with the vanilla, lemon juice and optional sugar. Continue stirring for 2-3 minutes until thickened into a glossy cherry sauce.
- Pour the filling into a medium baking dish.
- To make the crumble, combine the flour, oats, brown sugar and salt in a bowl. Rub the cold butter through with your fingertips until the mixture resembles coarse crumbs.
- Scatter the crumble evenly over the cherry filling.
- Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
- Allow to stand for 10 minutes before serving.
